I believe I need to get hold of a better workshop manual

Anybody have torque settings for the brake disc bolts on a Renault 8 Gordini?

Not sure what you are referring to. There are 4 M8 bolts holding the mounting plate and nothing more. Rest of the hard work gets held in place by the 6mm split pins. I just tighten the 4 bolts as I would tighten any other bolts with a 13mm spanner.

The three bolts and nuts that secure the brake disc to the hub. Or aren't there any specified torque for these?

The three disc to hub nut and bolt torque is specified as 4.5Mkg plus or minus 1 (or 25-40 lbft) in the Renault manual.

In my manual they call it "hub to Disc" bolts as you rightly said and there is not a torque specification for it.
